Low-fat potato pancakes

Ingredients:
4 cupPotato, grated
1 cupOnion, grated
2 ea Egg whites
Salt & pepper, to taste
2 tbspVegetable oil, or baking
-spray
Procedures:
1These are untraditional as they are baked, not fried.
2Preheat oven to 375°F.
3Place rack in bottom third.
4Combine potatoes, onion, egg whites, salt and pepper.
5Grease or spray baking sheet.
6Drop 2 tbsp. of mixture and flatten into each circle.
7Place in oven and bake for about 20 minutes per side, or until crisp on both sides.
8Makes: 16 pancakes
