| cup | Onion, grated | | | 2 ea Egg whites | | | Salt & pepper, to taste | | 2
| tbsp | Vegetable oil, or baking | | | -spray |

Procedures:
| 1 | These are untraditional as they are baked, not fried. | | 2 | Preheat oven to 375°F. | | 3 | Place rack in bottom third. | | 4 | Combine potatoes, onion, egg whites, salt and pepper. | | 5 | Grease or spray baking sheet. | | 6 | Drop 2 tbsp. of mixture and flatten into each circle. | | 7 | Place in oven and bake for about 20 minutes per side, or until crisp on both sides. | | 8 | Makes: 16 pancakes |
