Baked ham in champagne

Ingredients:
1 (9-lb) boneless ham
1 lbsLight brown sugar
2 Bottles X-dry champagne
3 tbspHoney
1 1/2 tspGround ginger
1 1/2 tspDry mustard
Pineapple slices (opt.)
Spiced apples (optional)
Procedures:
1Score ham and place on rack in baking pan.
2Cover top with 1 cup brown sugar and pour over 1 bottle champagne.
3Bake at 325f 2 hours.
4Combine remaining bottle champagne, remaining brown sugar, honey, ginger and mustard and bring to rolling boil in saucepan.
5Lower heat and simmer while basting ham every 15 minutes until done.
6Garnish with pineapple slices and spiced apples, if desired.
7Makes 15 to 20 servings
