Ingredients:
1 2/3 cupFlour, all-purpose
1 1/2 ozCornmeal, yellow
- uncooked
1 tbspBaking powder, double-acting
3/4 lbsApples
- cored, pared
- finely chopped
1/2 cupCorn, whole-kernal, frozed
- thawed
2 1/4 ozCheese, Chedder, reduced-fat
- shredded
1/3 cupSugar, granulated
1 dashCinnamon, ground
1 dashNutmeg, ground
6 tbspCorn oil
3 Eggs
- lightly beaten
Procedures:
1Preheat oven to 400°F.
2Line 12 2-? muffin-pan cups with paper baking cups; set aside.
3In large mixing bowl combine flour, cornmeal and baking powder.
4Add apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to combine.
5In small bowl beat together oil and eggs; stir into flour mixture.
6Fill each baking cup with an equal amount of batter.
7Bake in middle of even fro 15 minutes, until golded and tootpick comes out dry.
8Set pan on wire rack and let cool.
