Ingredients:
1 largeGranny Smith apple
3 medCarrots, peeled
3 Egg whites, lightly beaten
2 tbspCanola oil
1/4 cupUnsweetened applesauce
1/2 cupDark brown sugar
1 tspVanilla
3/4 cupFlour
1 1/2 tspBaking soda
1 1/2 tspBaking powder
1 tspCinnamon
1/2 tspNutmeg
1/4 tspCloves
1/4 tspSalt
1/3 cupQuick-cooking oatmeal
2/3 cupDark or golden raisins
1/2 cupGrape Nuts cereal
Procedures:
1Preheat oven to 350 degrees.
2Spray nine regular-sized muffin cups with vegetable cooking spray and set aside.
3Cut the apple into quarters and remove the core.
4Coarsely grate the apple and carrots, either by hand or with a food processor.
5Combine with the lightly beaten egg whites, oil, applesauce, brown sugar and vanilla.
6Sift together the flour, soda, baking powder, cinnamon, nutmeg, cloves and salt.
7Stir into the moist ingredients.
8Add the oatmeal, raisins and cereal.
9Spoon in the prepared muffin tins, filling to the top.
10Bake 30 minutes, until the muffins test clean.
11Cool a few minutes in the pan before unmolding onto a cooling rack
