| | Alligator tail steaks | | | Milk for marinade | | 1/4
| tsp | Cayenne pepper | | | Red pepper flakes | | | -about ? thick | | 1/2
| tsp | Fresh ground black pepper | | 1
| tbsp | Rosemary |

Procedures:
| 1 | Place milk in a deep bowl, add pepper flakes and rosemary. | | 2 | Season meat with black and cayenne peppers. | | 3 | Place meat in the bowl, add milk as needed to cover. | | 4 | Let marinate 3-4 hours. | | 5 | Remove meat from marinade, discard marinade. | | 6 | Pat the meat dry. | | 7 | Re-season the meat, if desired, with black and red peppers. | | 8 | Add salt to taste, if desired. | | 9 | Brush meat with olive oil to reduce sticking, and grill over hot coals, or over medium heat in a gas grill for about 10 minutes each side, brushing with oil again when turning |
