Barbecued alligator tail

Ingredients:
4 Alligator tail steaks
Milk for marinade
1/4 tspCayenne pepper
Red pepper flakes
-about ? thick
1/2 tspFresh ground black pepper
1 tbspRosemary
Procedures:
1Place milk in a deep bowl, add pepper flakes and rosemary.
2Season meat with black and cayenne peppers.
3Place meat in the bowl, add milk as needed to cover.
4Let marinate 3-4 hours.
5Remove meat from marinade, discard marinade.
6Pat the meat dry.
7Re-season the meat, if desired, with black and red peppers.
8Add salt to taste, if desired.
9Brush meat with olive oil to reduce sticking, and grill over hot coals, or over medium heat in a gas grill for about 10 minutes each side, brushing with oil again when turning
