Ingredients:
1 3/4 lbs(to 2lb) baby beef ribs
BASTING SAUCE
3 tbspOil
3 tbspChili sauce
2 tbspLemon juice
1 dashBlack pepper
1 dashDry mustard
Procedures:
1Wipe ribs with moist towel or with damp paper towels.
2Place ribs in single layer in a shallow roasting pan.
3Roast ribs at 450f for about 20 minutes, turning once.
4Prepare basting sauce.
5Mix all ingredients together.
6Remove ribs from oven.
7Brush ribs with sauce on both sides.
8Return to oven.
9Bake at 450f for about 20 minutes longer or until ribs are tender.
10Baste with remaining sauce from time to time while baking.
11If ribs start getting too dark, cover with aluminum foil and reduce heat to 400f for the last 10 minutes of baking time.
12Note: this basting sauce is good also for chicken or turkey legs or for ground meat patties.
13For higher flavor you may wish to add 2 tablespoons red wine to basting sauce.
