Ingredients:
2 cupFlour
2 tspBaking powder
1 1/2 tspCinnamon, ground
1/4 tspNutmeg, ground
1/4 tspSalt
2 Eggs
2/3 cupApple juice concentrate
1/3 cupButter
1 tspVanilla
2 medApples
1/2 cupWalnuts, chopped
Procedures:
1Preheat oven to 350.
2Peel, seed, and finely chop apples.
3Grease 12 muffin cups or line with paper liners; set aside.
4Combine dry ingredients in medium bowl.
5Combine and add eggs, apple juice concentrate, melted butter, and vanilla; mix just until dry ingredients are moistened.
6Stir in apple and walnuts.
7Spoon batter into prepared cups, filling each cup ?full.
8Bake 25 minutes, until golden brown.
9Let stand in pan on wire rack 5 minutes.
10Remove from pan.
11Serve warm or at room temperature.
12Cooled muffins may be wrapped securely and frozen up to 3 months.
