Ingredients:
| 3/4
| cup | Sugar | | 2
| tbsp | Shortening | | 1
| each | Egg, Large | | 3/4
| cup | Apricot Nectar | | 4
| tsp | Orange Rind, Grated | | 3
| cup | Whole Wheat Flour | | 3 1/2
| tsp | Baking Powder | | 1
| tsp | Salt | | 1
| cup | Apricots, Dried, ChoppedFine | | 3/4
| cup | Chopped Nuts, Optional |

Procedures:
| 1 | Mix the sugar, shortening and egg until fluffy. | | 2 | Stir in the apricot nectar and orange rind. | | 3 | Sift together the flour, baking powder, salt and add to the creamed mixture. | | 4 | Blend in the apricots and nuts and add to the batter. | | 5 | Pour into the muffin tins, that have been sprayed with a non-stick coating. | | 6 | Let stand for 20 minutes and then bake at 350 °F. | | 7 | For 15 to 20 minutes or until done. | | 8 | Cool on racks |
