Apricot nut muffins

Ingredients:
3/4 cupSugar
2 tbspShortening
1 eachEgg, Large
3/4 cupApricot Nectar
4 tspOrange Rind, Grated
3 cupWhole Wheat Flour
3 1/2 tspBaking Powder
1 tspSalt
1 cupApricots, Dried, ChoppedFine
3/4 cupChopped Nuts, Optional
Procedures:
1Mix the sugar, shortening and egg until fluffy.
2Stir in the apricot nectar and orange rind.
3Sift together the flour, baking powder, salt and add to the creamed mixture.
4Blend in the apricots and nuts and add to the batter.
5Pour into the muffin tins, that have been sprayed with a non-stick coating.
6Let stand for 20 minutes and then bake at 350 °F.
7For 15 to 20 minutes or until done.
8Cool on racks
