Ingredients:
2 1/2 cupFlour
1 cupSugar
1 1/2 tbspBaking powder
1/2 tspLite salt or less or none
3 tbspOil
1/2 cupSkim milk
2 ea Egg whites
1/4 cupOrange juice
4 tspGrated orange peel
1/4 cupPecans, chopped
10 ea Halves dried apricots**
Procedures:
1**chop the halves of large dried apricots(no preserv).
2Preheat oven to 350 degrees.
3Lightly oil and flour 9-by-5-inch loaf pan.
4Measure all ingredients into large mixer bowl; beat on medium speed ?minute, scraping bottom and sides of bowl constantly.
5Pour into pan.
6Bake 35 minutes to 45 minutes or until a wooden pick inserted in center comes out clean.
7Remove from pan after 5 minutes; cool thoroughly before slicing.
