QUICK BREAD BASE
1 1/2 cupFlour
1/2 tspSalt
1 cupSugar
1 tspBaking soda
1/2 cupVegetable oil
2 Eggs, beaten
PUMPKIN
1 cupCanned pumpkin
2 tspPumpkin pie spice
1/3 cupNuts (optional)
1/3 cupRaisins (optional)
APPLESAUCE
1 cupApplesauce
1 tbspMolasses
1 tspCinnamon
BANANA
3 Ripe bananas, mashed
1/2 tspCinnamon
1/2 tspGinger
PEANUT BUTTER BANANA
2 Ripe bananas, mashed
1/2 cupPeanut butter
CRANBERRY
1 cupCranberries, chopped
1 tbspOrange juice concentrate
Procedures:
1Preheat oven to 32Gather the ingredients for the quick bread base and one of the variations.
2Coat 4 small loaf pans with vegetable cooking spray.
3Combine dry ingredients; blend well and set aside.
4Combine wet ingredients; blend well.
5Mix together wet and dry ingredients.
6Do not overmix.
7Distribute batter among the 4 pans, and bake for 30 to 40 minutes.
