Ingredients:
1/4 cupButter Or Margarine
1/4 cupSugar
1 Egg
1 Pureed Avocado
1 cupToasted Slivered Almonds
1 cupMilk
2 cupSelf-Rising Flour
Procedures:
1Preheat oven to 400°F and prepare muffin pans.
2Cream butter and sugar.
3Beat in the egg.
4Blend in the avocado, milk and nuts.
5Lastly add the flour and mix gently but thoroughly until the ingredients are moistened and combined.
6Place in pans and sprinkle each with topping.
7Bake for 20 to 25 minutes.
8Note: add a dash of grated lemon rind.
9Almonds may be toasted quickly in the microwave or in a dry frying pan, stirring constantly to stop burning
