Ingredients:
3 xVery Ripe Bananas
1/2 cupShortening (butter)
3 tbspYoghurt or sour cream
1 tspBaking soda
1 tspVanilla
1 cupSugar
2 xEggs
2 cupFlour *
1 cupChopped walnuts (optional)
Procedures:
1* i prefer whole wheat pastry flour (1) preheat oven to 350 °F.
2Cream the shortening and sugar.
3(2) mix in the bananas.
4(3) mix in the remaining ingredients.
5(4) pour into a greased loaf pan.
6(5) bake 1 hour 15-20 minutes at 350 degrees.
7Notes: if you use more than 3 normal-size bananas, i suggest you lower the oven temperature and cook a while longer.
8Otherwise the crust comes out almost overcooked while the middle remains moist and almost undercooked
