| 1 | Cut steak into cubes. |
| 2 | Heat oil and fry mustard seeds till they burst. |
| 3 | Add fenugreek, garlic, ginger and onion. |
| 4 | Fry until onions are golden. |
| 5 | Add turmeric and fry 1 minute. |
| 6 | Add coriander, cumin and chilli. |
| 7 | Stir well. |
| 8 | Add salt and vinegar, and fry until liquid evaporates. |
| 9 | Sprinkle in the garam masala and mix well. |
| 10 | Add meat and turn till coated. |
| 11 | Add extra vinegar if spices start to stick. |
| 12 | Reduce heat, cover and simmer for 1.5 to 2 hours. |
| 13 | Add cubed potatoes and cover. |
| 14 | Cook for a further 20-30 minutes or until potatoes are cooked. |
| 15 | Garnish with fresh coriander. |
