Procedures:
1Wash heart thoroughly.
2Remove veins and arteries.
3Rub inside and outside with salt and pepper.
4Fill with highly seasoned poultry stuffing.
5Sew or skewer.
6Brown in hot fat.
7Add 1 cup water and 1 cup canned tomatoes.
8Cover.
9Bake in slow oven (300°F) until tender, about 4 hours.
10Place whole onions around heart the last 30 minutes of cooking.
