| tbsp | Sugar | | 4
| tbsp | Salt * | | 1
| tbsp | Hickory salt |

Procedures:
| 1 | Mix sugar and salts together. | | 2 | Cover fish with this mixture and wrap in plastic wrap. | | 3 | Place in a plastic bag; tie; and put in dish in the refrigerator, meat side up, for two days. | | 4 | Turn the whole bag over and keep in the refrigerator for four more days. | | 5 | Wash off brine. | | 6 | Slice diagonally. | | 7 | * add more salt if desired. | | 8 | This recipe makes nova-type lox (smoked salmon) |
