| 1 | Combine pepper, ginger, allspice and coriander in a large sauce pan. |

| 3 | Add vinegar and lemon juice, stirring to blend. |
| 4 | Stri in ketchup, honey and apricot spread. |
| 5 | Add onion flakes and bay leaf. |
| 6 | Use brandy to rinse out ketchup bottle and pour into sauce. |
| 7 | Heat to simmer and cook for 30 minutes, uncovered. |
| 8 | Stir frequently. |
| 9 | Remove bay leaf and stir in hot pepper sauce. |
| 10 | Taste and adjust seasoning. |
| 11 | Pour into container with airtight lid and refrigerate |
