Ingredients:
1 tbspBLACK PEPPER
1 tspGROUND GINGER
1 tspGROUND ALLSPICE
2 tspGROUND CORIANDER
1/2 cupWHITE VINEGAR
1/2 cupFRESH SQUEEZED LEMON JUICE
1 quartKETCHUP
1 cupHONEY
1 cupALL FRUIT APRICOT SPREAD
1/4 cupDRIED ONION FLAKES
1 ea BAY LEAF
1/4 cupMETAXA BRANDY
1 tspHOT PEPPER SAUCE
Procedures:
1Combine pepper, ginger, allspice and coriander in a large sauce pan.
2Mix well.
3Add vinegar and lemon juice, stirring to blend.
4Stri in ketchup, honey and apricot spread.
5Add onion flakes and bay leaf.
6Use brandy to rinse out ketchup bottle and pour into sauce.
7Heat to simmer and cook for 30 minutes, uncovered.
8Stir frequently.
9Remove bay leaf and stir in hot pepper sauce.
10Taste and adjust seasoning.
11Pour into container with airtight lid and refrigerate
