Greek eggplant appetizer

Ingredients:
2 medEggplant
3 medTomatoes, peeled & coarsely
-- chopped
3 Garlic cloves
3 tbspChopped parsley
1/2 tspOregano
1 tspFresh mint, chopped
1 tspSalt
1/4 tspPepper
3 tbspOlive oil
5 tbspLemon juice
Procedures:
1Cook eggplants in their skins.
2Peel them or scoop out the insides.
3Mix the pulp with the tomatoes, galric, herbs, salt & pepper.
4Put into blender.
5Add oil a little at a time, blending at low speed.
6Add lemon juice & vinegar & blend at a higher speed till smooth.
7Serve with pita.
