Green beans in olive oil

Ingredients:
1 lbsGreen beans
1 medOnion, chopped
2 eachChopped tomatoes
1 tspSalt
1/3 cupExtra virgin olive oil
3 1/2 tspSugar
?2 c water
Procedures:
1Trim beans & cut into 3 pieces, wash & drain.
2Put onion & tomato into a heavy pan.
3Sprinkle with salt & rub in lightly with fingers.
4Stir in the beans, olive oil & sugar, mix well.
5Cover & cook for 15 minutes over medium heat.
6Stir occasionally.
7The beans will lose their colour & soften.
8When all the moisture has been absorbed, stir-fry the beans for 2 to 3 minutes.
9Add ?cup water, cover & simmer for 40 to 50 minutes, till the beans are tender.
10Add more water if necessary, ?cup at a time.
11When cooked, the dish should be very moist but not watery.
12Serve cold as part of a buffet.
