Ingredients:

| lbs | Green beans | | 1
| med | Onion, chopped | | 2
| each | Chopped tomatoes | | 1
| tsp | Salt | | 1/3
| cup | Extra virgin olive oil | | 3 1/2
| tsp | Sugar | | | ?2 c water |

Procedures:
| 1 | Trim beans & cut into 3 pieces, wash & drain. | | 2 | Put onion & tomato into a heavy pan. | | 3 | Sprinkle with salt & rub in lightly with fingers. | | 4 | Stir in the beans, olive oil & sugar, mix well. | | 5 | Cover & cook for 15 minutes over medium heat. | | 6 | Stir occasionally. | | 7 | The beans will lose their colour & soften. | | 8 | When all the moisture has been absorbed, stir-fry the beans for 2 to 3 minutes. | | 9 | Add ?cup water, cover & simmer for 40 to 50 minutes, till the beans are tender. | | 10 | Add more water if necessary, ?cup at a time. | | 11 | When cooked, the dish should be very moist but not watery. | | 12 | Serve cold as part of a buffet. | | 13 | Ayla esen algar, "the complete book of turkish cooking |
