Ingredients:
FILLING
3 tbspDill freshly chopped fine
3 tbspParsley freshly chopped fine
1 tbspGarlic minced
9 tbspScallions chopped fine
1 tbspBlack pepper frshly ground
8 tbspButter
1 1/2 tspSalt
DOUGH
1 1/2 cupAll purpose flour
1/2 tspSalt
4 tbspButter, softened
2/3 cupLuke warm water
SAUCE
1 tspCider vinegar
1/4 cupSour cream
2 tbspButter
1/2 tspFlour
6 tbspFinely minced onion
1/2 tspSalt
1 tspBlack pepper frsshly ground
1 tbspLemon or lime juice frshly
- squeezed & strained
Procedures:
1Dough: place the flour into a deep mixing bowl.
2Make a hollow in the center.
3Add the water into the hollow, salt, & 2 t of the butter.
4Stir slowly untilk all of the ingredients are well mixed and the water is totally absorbed.
5Beat vigorously with a large spoon until a firm, stiff dough is formed.
6Gather the dough into a ball.
7On floured surface roll the dough ball out into a rectangle approx. 16" x 18".
8Brush the dough with the remaining butter, fold into quarters, then roll it out as thinly as possible.
9Cut into a 16" x 18" rectangle the cut that into 48 each 2" squares.
10Filling: combine the salt, pepper, scallions, garlic, parsley, & dill.
11Cut the butter into tiny bits and chill until the dough is ready.
12Place a teaspoon of the filling mix into the center of each square, add a piece of the butter to each.
13Draw up the corners and pinch them together firmly thus closing the filling into the dough.
14Heat enough oil in a deep pot.
15Heat to 375 °F.
16And drop in 4-6 of the filled squares.
17Cook for 4 minutes, remove from the oil, drain, and serve warm.
18Sauce: melt the butter, add the chopped onions, the salt, the pepper, & the vinegar.
19Cook for 4 minutes then add the remaining ingredients.
20Stir constantly until it thickens.
21Remove from the heat.
22Ad the lemon juice and serve over the fritters
