Ingredients:
1 cupCranberries, fresh, chopped
1/2 cupPears, peeled, chopped
2 tbspHoney
1 tbspCurrants
1/4 tspPumpkin pie spice
3 tbspCranberry juice cocktail
2 tbspRed wine vinegar
2 tspLemon juice
15 ozBrie, round, fully ripened
Procedures:
1Combine first 8 ingredients in a heavy saucepan; bring mix to a boil over medium-high heat.
2Cover, reduce heat, and simmer 30 minutes, stirring frequently.
3Uncover and cook an additional 5 minutes or until mix is thickened, stirring frequently.
4Cool mix to room temperature.
5Cut circle in top rind of cheese, leaving an ? border of rind.
6Carefully remove center circle of rind from cheese, leaving border intact.
7Place brie on an ovenproof serving platter.
8Spread cranberry mix over top.
9Bake at 350°F for 12-15 minutes or until cheese is bubbly.
10Serve immediately with melba rounds or sliced apples and pears.
11Yield: 30 appetizer servings
