Ingredients:
1 tspCayenne pepper
1 tspSalt
2 1/2 cupFlour
8 ozCheddar cheese, grated
1/2 lbsButter (2 sticks) unsalted-
At room temperature
1 cupPecans, chopped fine
Procedures:
1Sift cayenne, salt, and flour together.
2In a separate bowl, cream butter and cheese together.
3Gradually add flour mixture and mix thoroughly.
4Add pecans.
5Divide dough in half.
6Roll into logs, 1 ?inches x 8 inches.
7Wrap each log in plastic wrap and refrigerate for up to two weeks or freeze for up to 6 months.
8To serve: preheat oven to 350 deg f.
9Grease baking sheets.
10With a sharp knife, cut logs into ? thick slices.
11Arrange slices on baking sheets about ?apart.
12Bake for 15 to 20 minutes or until light golden brown.
13Remove from sheets and cool completely.
14Store in airtight containers.
