Bean burgers

Ingredients:
3 cupCooked beans (kidney or
-pinto beans are good)
1 medOnion, finely chopped
1 largePotato, cooked
2 largeTomatoes, chopped
2 tspChopped thyme
-(or 1 scant teaspoon dry)
3/4 cupBreadcrumbs or whole-wheat
-flour
Salt to taste
Pepper to taste
Procedures:
1From "eating in," the biosphere press, space biosphere ventures.
2Mix all the ingredients thoroughly, either in a food processor or with a potato masher.
3The cooked beans should be mashed, not pureed, and the mixture should form into balls easily.
4If the mixture is too wet, add a little more breadcrumbs or flour.
5Form the mixture into eight burgers and place them on a lightly greased baking tray.
6Bake at 350°F.
7For 45 minutes, turning them over after 30 minutes.
8Place the burgers inside buns ("eating in" also includes a recipe for whole-wheat buns) and top with fried onions, lettuce, tomato, pickles, or whatever your taste dictates.
