Flageolet and garlic dip

Ingredients:
175 gramsCanned flageolets
2 tspGround cumin
2 tspCoriander
2 tspTurmeric
1 largeGarlic clove, crushed
1/2 Lemon, juiced
3 tbspOlive oil
-or slightly more
Salt
Procedures:
1The soft green colour of flageolets is highlighted by turmeric, and the rest of the spicing gives this dip a vaguely oriental feeling.
2It is rich, nourishing food best served with crudités and bread-sticks or pitta bread.
3Put the flageolets, spices, garlic and lemon juice into the blender and whizz to a thick purée with some of the juices from the can.
4Gradually stir the oil into the mixture to thin out to a dipping consistency.
