Ingredients:
1 lbsChicken breasts
2 tbspCanola oil
1 medOnion, chopped
2 tspChili powder
1/2 tspCumin
1/2 tspOregano leaves, crushed
1/2 cupChicken broth
1 1/2 cupV8 juice
19 ozCanned kidney beans
Procedures:
1Preparation time = 30 minutes chicken breasts should be skinned and boned.
2Any suitable oil can be substituted for canola oil.
3Chicken broth may be purchased as instant and mixed with water.
4V8 juice is a brandname vegetable juice.
5Cut the chicken into ?inch pieces.
6In hot oil, cook chicken, onion, chili powder, cumin and oregano until the chicken turns white.
7Stir in broth and juice, heat until boiling, then reduce heat to low.
8Simmer 10 minutes.
9Dump in beans, liquid and all, stir, cover and simmer for another 10 minutes.
10Stir occasionally.
