Ingredients:
2 tbspButter or margarine
3 tbspAll-purpose flour
1/2 cupChicken stock or bouillon
1 cupMilk -OR- half & half
1 tspOnion, grated
2 tbspCanned diced green chilies
1/4 tspSalt
1/2 cupMonterey Jack cheese, shred
3 Hard-cooked eggs, sliced
1/2 cupHam, cooked, chopped
6 (8-inch) flour tortillas
Procedures:
1Preheat oven to 375°F.
2In a small saucepan, melt butter.
3Stir in flour.
4Cook and stir 2 minutes.
5Stir in stock and milk.
6Cook, stirring constantly, over medium heat until thickened; remove from heat.
7Stir in onion, chilies, salt and cheese.
8Arrange ?a sliced egg and 1 rounded tablespoon ham on each tortilla.
9Spoon about 2 tablespoon cheese sauce over ham.
10Fold both sides of each tortilla over filling; then fold top and bottom to slightly overlap in center.
11Place filled tortillas, folded-side down, in a shallow baking pan.
12Cover with foil.
13Bake in preheated oven 10 to 12 minutes or until heated through.
14Serve warm.
