Ingredients:

| tbsp | Butter or margarine | | 3
| tbsp | All-purpose flour | | 1/2
| cup | Chicken stock or bouillon | | 1
| cup | Milk -OR- half & half | | 1
| tsp | Onion, grated | | 2
| tbsp | Canned diced green chilies | | 1/4
| tsp | Salt | | 1/2
| cup | Monterey Jack cheese, shred | | 3
| | Hard-cooked eggs, sliced | | 1/2
| cup | Ham, cooked, chopped | | 6
| | (8-inch) flour tortillas |

Procedures:
| 1 | Preheat oven to 375°F. | | 2 | In a small saucepan, melt butter. | | 3 | Stir in flour. | | 4 | Cook and stir 2 minutes. | | 5 | Stir in stock and milk. | | 6 | Cook, stirring constantly, over medium heat until thickened; remove from heat. | | 7 | Stir in onion, chilies, salt and cheese. | | 8 | Arrange ?a sliced egg and 1 rounded tablespoon ham on each tortilla. | | 9 | Spoon about 2 tablespoon cheese sauce over ham. | | 10 | Fold both sides of each tortilla over filling; then fold top and bottom to slightly overlap in center. | | 11 | Place filled tortillas, folded-side down, in a shallow baking pan. | | 12 | Cover with foil. | | 13 | Bake in preheated oven 10 to 12 minutes or until heated through. | | 14 | Serve warm. | | 15 | Makes 6 servings |
