Ingredients:
SALAD
3 cupMixed salad greens
1 eachCarrot, chopped
1 eachCucumber, peeled & chopped
1 eachTomato, chopped
1 eachScallion, chopped
1/4 cupFresh mint chopped, optional
SESAME-PEANUT DRESSING
1 tbspSesame seeds
2 eachGarlic cloves, crushed
1 tspCrushed red peppers
1/4 cupBrown rice syrup
2 tbspLime juice
3 tbspTamari
2 tbspWater
1/4 cupRoasted peanuts, chopped
Procedures:
1Salad: tear greens into bite sized pieces.
2Toss all salad ingredients & arrange on a serving platter.
3Dressing: dry roast the sesame seeds in a small frying pan over medium heat, stirring often until golden brown, about 2 to 4 minutes.
4Set aside to cool.
5Whisk together the garlic, pepper flakes, syrup, lime juice, tamari & water.
6Pour dressing over the salad.
7Garnish with sesame seeds & peanuts & serve at room temperature
