Ingredients:

| small | Eggplant, peeled, halved | | | -- lengthwise & cut into ?/td> | | | -- inch slices | | 3
| med | Yellow squash, prepared same | | | -- as above | | | Salt | | | Vegetable oil for frying | | | Taratour, see recipe | | | Pitas cut into wedges |

Procedures:
| 1 | Lightly salt both sides of eggplant & squash slices. | | 2 | Layer them on paper towels & cover with another layer of paper towels. | | 3 | Set aside for an hour to drain. | | 4 | Pour oil to a depth of ? in a heavy skillet & heat till hot but not smoking. | | 5 | Working in batches, add egplant & squash & fry over medium heat till golden brown. | | 6 | Remove & drain on paper towels. | | 7 | Add more oil if necessary. | | 8 | Arrange eggplant & squash on on a serving platter & lace with taratour. | | 9 | Surround with pita wedges. | | 10 | Virginia habeeb, "pita the great |
