Fried eggplant & squash with taratour

Ingredients:
1 smallEggplant, peeled, halved
-- lengthwise & cut into ?/td>
-- inch slices
3 medYellow squash, prepared same
-- as above
Salt
Vegetable oil for frying
Taratour, see recipe
Pitas cut into wedges
Procedures:
1Lightly salt both sides of eggplant & squash slices.
2Layer them on paper towels & cover with another layer of paper towels.
3Set aside for an hour to drain.
4Pour oil to a depth of ? in a heavy skillet & heat till hot but not smoking.
5Working in batches, add egplant & squash & fry over medium heat till golden brown.
6Remove & drain on paper towels.
7Add more oil if necessary.
8Arrange eggplant & squash on on a serving platter & lace with taratour.
9Surround with pita wedges.
