Ingredients:
| | SWEET-SOUR SAUCE | | 1/4
| cup | Cider vinegar | | 1
| tsp | Soy sauce | | 1/2
| cup | Sugar | | 1
| cup | Water or pineapple juice | | 1/2
| tsp | Finely grated gingerroot | | 1/2
| | Garlic clove, crushed | | 2
| tbsp | Cornstarch, blended with: | | 2
| tbsp | Cold water | | | Salt | | | LUMPIA | | 1/2
| lbs | Ground pork | | 1/2
| lbs | Uncooked shrimp | | | - finely chopped | | 1/2
| cup | Minced mushrooms | | 1/2
| cup | Diced peeled jicama | | 2
| | Green onions, finely chopped | | 3
| | Egg yolks | | 2
| tbsp | Soy sauce | | | Lumpia wrappers | | | Oil, for deep-frying |

Procedures:
| 1 | To make sauce, combine vinegar, 1 teaspoon soy sauce, sugar, water, ginger and garlic in small saucepan. | | 2 | Bring to boil. | | 3 | Stir in cornstarch paste and simmer 5 minutes, or until thickened. | | 4 | Season to taste with salt. | | 5 | Keep warm. | | 6 | For lumpia, mix pork, shrimp, mushrooms, jicama, green onions, egg yolks and 2 tablespoons soy sauce in bowl. | | 7 | Mix well. | | 8 | Shape about 1 ?tablespoons meat mixture into strip and place along one side of lumpia wrapper. | | 9 | Roll tightly, folding in wrapper ends while rolling. | | 10 | Moisten edges lightly with water to seal. | | 11 | Repeat with remaining filling. | | 12 | Fry in deep hot oil until golden brown. | | 13 | Serve whole or cut in halves or thirds. | | 14 | Serve with sweet-sour sauce |
