Ingredients:
SWEET-SOUR SAUCE
1/4 cupCider vinegar
1 tspSoy sauce
1/2 cupSugar
1 cupWater or pineapple juice
1/2 tspFinely grated gingerroot
1/2 Garlic clove, crushed
2 tbspCornstarch, blended with:
2 tbspCold water
Salt
LUMPIA
1/2 lbsGround pork
1/2 lbsUncooked shrimp
- finely chopped
1/2 cupMinced mushrooms
1/2 cupDiced peeled jicama
2 Green onions, finely chopped
3 Egg yolks
2 tbspSoy sauce
Lumpia wrappers
Oil, for deep-frying
Procedures:
1To make sauce, combine vinegar, 1 teaspoon soy sauce, sugar, water, ginger and garlic in small saucepan.
2Bring to boil.
3Stir in cornstarch paste and simmer 5 minutes, or until thickened.
4Season to taste with salt.
5Keep warm.
6For lumpia, mix pork, shrimp, mushrooms, jicama, green onions, egg yolks and 2 tablespoons soy sauce in bowl.
7Mix well.
8Shape about 1 ?tablespoons meat mixture into strip and place along one side of lumpia wrapper.
9Roll tightly, folding in wrapper ends while rolling.
10Moisten edges lightly with water to seal.
11Repeat with remaining filling.
12Fry in deep hot oil until golden brown.
13Serve whole or cut in halves or thirds.
14Serve with sweet-sour sauce
